  • 1 cup vegetable oil
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups peeled and finely diced apples
  • 1/2 cup chopped walnuts (optional)

  • For the cream cheese frosting:
  • 4 ounces cream cheese, at room temperature
  • 1/2 cup (1 stick) butter, at room temperature
  • 2 cups powdered sugar

Instructions

Making the Cupcakes:

Preheat the oven to 350 degrees F. Line a 12-cup muffin tin with paper liners. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside.

In a large bowl, whisk together the sugar, oil, eggs, and vanilla extract until combined. Add the dry ingredients to the wet ingredients and mix until just combined. Fold in the apples, walnuts, and raisins, if using. Divide the batter evenly among the muffin cups.

Bake for 18 to 20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean. Allow the cupcakes to cool in the pan for 5 minutes, then transfer them to a wire rack to finish cooling.

Making the Cream Cheese Frosting:

In a medium bowl, using an electric mixer, beat the cream cheese and butter until light and fluffy. Add the powdered sugar and beat until smooth. Add the vanilla extract and beat until combined. Spread the frosting over the cooled cupcakes.
