What You Need to Make the Fuhrer Cake:

Ingredients:

  • 2 cups of all-purpose flour
  • 1 teaspoon of baking powder
  • 1 teaspoon of baking soda
  • 1/2 teaspoon of salt
  • 1/2 cup of butter, softened
  • 3/4 cup of white sugar
  • 2 eggs
  • 1 teaspoon of vanilla extract
  • 1 cup of buttermilk
  • 2 cups of seasonal fruit (such as apples, pears, peaches, or plums)
  • 1/2 cup of almond meal
  • For the custard filling:
    • 2 cups of heavy cream
    • 4 egg yolks
    • 1/2 cup of white sugar
    • 1 teaspoon of vanilla extract

Instructions:

To start, preheat your oven to 350 degrees Fahrenheit. Grease a 9-inch cake pan with butter and set aside.
In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. In a separate bowl, cream together the butter and sugar until light and fluffy. Add the eggs one at a time, beating until combined. Add the vanilla extract and buttermilk and mix until combined. Gradually add the dry ingredients to the wet ingredients and mix until combined.

Pour the batter into the prepared cake pan and spread evenly. Arrange the seasonal fruit over the top of the batter. Sprinkle the almond meal over the top of the fruit. Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the cake comes out clean.

While the cake is baking, make the custard filling. In a medium saucepan over medium heat, combine the heavy cream, egg yolks, sugar, and vanilla extract. Whisk continuously until the mixture thickens and coats the back of a spoon. Once the custard has reached the desired consistency, remove from the heat and set aside.

Once the cake is finished baking, allow it to cool for 30 minutes before adding the custard filling. Spread the custard over the top of the cake and allow it to cool completely. Serve the Fuhrer Cake with a dollop of whipped cream and enjoy!
