Lemon Coconut Cake

Ingredients

Instructions

Preheat your oven to 350 degrees F. Grease and flour two 9-inch round cake pans. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

In a separate bowl, beat together the butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Add the lemon extract, sour cream, and coconut milk and beat until fully combined. Gradually add the flour mixture and beat until just incorporated.

Pour the batter into the prepared cake pans and spread evenly. Sprinkle the shredded coconut over the top. Bake for 25-30 minutes, or until a toothpick inserted into the center of the cake comes out clean. Remove from the oven and let cool in the pans for 10 minutes. Frosting

  • 4 cups confectioner’s sugar
  • 2 tablespoons lemon juice
  • 1 teaspoon vanilla extract
  • 3-4 tablespoons coconut milk

Beat together the butter, confectioner’s sugar, lemon juice, and vanilla extract until light and fluffy. Add the coconut milk and beat until fully incorporated. Spread the frosting over the cooled cake.
