Ingredients

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 1 cup cocoa powder
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup sour cream
  • 1 cup butter, melted
  • 1 teaspoon vanilla extract
  • 1 cup boiling water

Instructions

Preheat oven to 350°F. Grease and flour two 9-inch round cake pans.

In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Set aside.

In a medium bowl, whisk together the eggs, sour cream, melted butter, and vanilla extract. Pour into the dry ingredients and mix until just combined. Slowly add in the boiling water and mix until fully incorporated.

Divide the batter evenly between the two prepared cake pans. Bake for 28-30 minutes or until a toothpick inserted into the center comes out clean. Allow the cakes to cool for 10 minutes before removing from the pans and transferring to a wire rack to cool completely.

Filling and Frosting

While the cakes are cooling, prepare the filling and frosting. To make the filling, melt 1/2 cup butter in a saucepan over medium heat. Whisk in 1 cup evaporated milk, 1 cup sugar, and 1 teaspoon vanilla extract. Bring the mixture to a gentle boil, stirring frequently. Reduce the heat to low and simmer for 3-4 minutes, stirring constantly. Remove from the heat and stir in 1 cup chopped pecans and 1 cup sweetened shredded coconut. Allow the mixture to cool while you prepare the frosting.

To make the frosting, beat 3 egg whites in a medium bowl until soft peaks form. Gradually add 1 cup sugar and continue to beat until stiff peaks form. Add 1/2 cup softened butter, 1 teaspoon vanilla extract, and 1/2 cup evaporated milk. Beat until fully combined.

Assembly

Once the cakes and fillings have cooled completely, place one cake layer on a cake plate. Top with the cooled filling, spreading it evenly. Place the second cake layer on top. Spread the frosting over the cake, covering it completely.

Serve the cake immediately or store in an airtight container in the refrigerator for up to 3 days.
