  • 1/2 cup warm water (110-115 degrees)
  • 1/2 cup sugar
  • 1/2 teaspoon salt
  • 1/2 cup butter, softened
  • 2 eggs
  • 3 1/2 cups all-purpose flour
  • 1/2 cup raisins
  • 1/2 cup chopped pecans
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground allspice
  • 1/4 teaspoon ground cloves
  • 1/2 cup light brown sugar
  • 1/4 cup butter, melted
  • 2 teaspoons grated orange zest
  • 1/2 cup orange juice
  • 1 beaten egg, for glaze

Instructions

Making the Dough

In a small bowl, dissolve the yeast in the warm water. In a large bowl, cream together the sugar, salt and butter. Add the eggs and beat until light and fluffy. Add the yeast mixture and beat until combined. Slowly add the flour, 1 cup at a time, and beat until the dough is smooth.

Turn the dough out onto a floured surface and knead for 5 minutes. Place the dough into a greased bowl and cover with a damp towel. Let the dough rise until doubled in size, about 1 hour.

Assembling the Cake

Preheat the oven to 350 degrees F. Grease a 9x13 inch baking pan.

On a lightly floured surface, roll out the dough into a 15x18 inch rectangle. Spread the raisins, pecans, cinnamon, nutmeg, allspice and cloves over the dough. Sprinkle with the brown sugar and dot with the melted butter. Roll the dough up, starting at the long end, and pinch the seams together to seal. Place the roll into the prepared pan.

In a small bowl, combine the orange zest and juice. Brush the mixture over the cake. Let the cake rise until doubled in size, about 45 minutes.

Baking the Cake

Brush the cake with the beaten egg. Bake for 30 to 35 minutes, or until golden brown. Let cool before serving.
