    Instructions

    • Preheat oven to 350 degrees F. Grease and flour two 9-inch round cake pans.
    • In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, allspice, cloves, and salt.
    • In the bowl of an electric mixer, beat the butter and both sugars together until light and fluffy, about 3 minutes.
    • Add the eggs, one at a time, beating well after each addition. Add the vanilla and beat to combine.
    • Add the dry ingredients and beat on low speed until just combined.
    • Add the oil and beat on low speed until just combined.
    • Add the carrots and beat on low speed until just combined.
