Instructions

Preheat oven to 350°F. Grease an 8-inch round cake pan and line the bottom with a circle of parchment paper. Grease the paper as well.

In a medium bowl, whisk together the flour, baking powder, and salt; set aside.

In a large bowl, using an electric mixer, beat the butter and 3/4 cup sugar on medium speed until light and fluffy, about 3 minutes. Beat in the almond extract. Add the eggs, one at a time, beating well after each addition. With the mixer on low speed, add the flour mixture in 3 additions, alternating with the milk, beginning and ending with the flour mixture. Beat just until blended.

Fold in the cranberries and almonds until evenly distributed. Spread the batter into the prepared pan. Sprinkle the top with the remaining 2 tablespoons sugar. Bake for 35 to 40 minutes, or until a toothpick inserted into the center comes out clean.

Cool the cake in the pan for 10 minutes, then turn out onto a wire rack to cool completely. Serve at room temperature.
