  • 3 large eggs
  • 200g caster sugar
  • 200g self-raising flour
  • 100ml vegetable oil
  • 100ml semi-skimmed milk
  • 2 teaspoons vanilla extract
  • Food colouring (colours of your choice)
  • 200g Tesco Finest White Chocolate, melted

Instructions

To make this delicious rainbow cake, preheat your oven to 180C/160C fan/gas 4 and lightly grease a 20cm round cake tin.

In a large bowl, whisk together the eggs, sugar and oil until light and fluffy. Then add in the flour, milk and vanilla extract and mix until everything is combined.

Divide the mixture into 6 separate bowls and add a few drops of food colouring to each bowl to get the desired colour.

Pour each colour of the mixture into the cake tin, adding each colour in a circular pattern. Then, using a skewer, swirl the cake mixture around to create a marbled effect.

Bake for 30 minutes or until a skewer inserted into the centre of the cake comes out clean. Once cooked, leave to cool for 10 minutes in the tin before transferring to a wire rack to cool completely.

Once cooled, melt the white chocolate and pour over the cake. Allow the chocolate to set for a few minutes before serving.
