Triple Layer Carrot Cake Recipe
Ingredients
For the cake layers:
-3 cups all-purpose flour
-1 teaspoon baking powder
-1 teaspoon baking soda
-1 teaspoon cinnamon
-1 teaspoon salt
-4 large eggs
-2 cups granulated sugar
-1 1/2 cups vegetable oil
-3 cups grated carrots
-1 teaspoon vanilla extract

Instructions
To make the cake: Preheat oven to 350 degrees F (175 degrees C). Grease and flour three 8 inch round cake pans.
In a large bowl, mix together the flour, baking powder, baking soda, cinnamon and salt. In a separate bowl, beat together the eggs, sugar, oil, carrots and vanilla. Stir the wet ingredients into the dry; mix until all of the flour is absorbed. Fold in the walnuts, if desired. Divide the batter evenly between the prepared pans.
Bake for 25 to 30 minutes in the preheated oven, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool in the pans for 10 minutes, then turn out onto a wire rack and cool completely.
To make the frosting: In a medium bowl, combine the cream cheese and butter, and beat until smooth. Gradually beat in the confectioners' sugar and vanilla until the frosting is thick and spreadable. Place one layer of cake on a serving plate, and spread with 1/3 of the frosting. Top with another layer, and spread with half of the remaining frosting. Top with the third layer, and spread with the remaining frosting. Sprinkle with walnuts, if desired.
