Ingredients

This recipe will make a triple layer Victoria sponge cake that serves 8-10 people. To make the cake you will need:

  • 200g butter, at room temperature
  • 200g caster sugar
  • 4 large free-range eggs
  • 1 teaspoon of vanilla extract
  • 200g self-raising flour
  • 2 tablespoons of milk
  • 4 tablespoons of strawberry jam
  • Icing sugar, for dusting

Instructions

To make the cake, preheat your oven to 180ºC (160ºC fan) and line the base of three 20cm cake tins with greaseproof paper. Start by creaming together the butter and sugar until the mixture is light and fluffy. Gradually add in the eggs, beating well after each addition. Add in the vanilla, then fold in the flour and milk.

Divide the mixture evenly between the three tins, then bake for 25 minutes, or until the cakes are golden and a skewer inserted into the centre of each one comes out clean. Leave to cool in the tins for 10 minutes, then turn out onto a wire rack to cool completely.

Assembling the Cake

Once the cakes are cooled, spread the jam evenly over the top of the first layer. Place the second layer on top, then spread with more jam. Place the third layer on top and dust with icing sugar to finish.
