5. In a separate bowl, beat egg whites with an electric mixer until stiff peaks form. Gently fold beaten egg whites into batter.

6. Divide batter between prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted in the center of each cake comes out clean. Let cool for 10 minutes before transferring to cooling racks to cool completely.

7. To make the frosting, beat heavy cream with an electric mixer until stiff peaks form. Fold in remaining 1 cup of coconut and spread over cooled cakes.

8. Sprinkle toasted coconut flakes over cake. Serve and enjoy!
