Ingredients

If you’re looking to bake a delicious 1 kg Christmas cake, you will need the following ingredients: 400g of plain flour, 400g of light muscovado sugar, 225g of softened butter, 4 large eggs, 1 teaspoon of baking powder, 1 teaspoon of mixed spice, 1 teaspoon of vanilla extract, 4 tablespoons of milk, 200g of glace cherries, 200g of sultanas, 100g of currants, 75g of chopped mixed peel, and 50g of flaked almonds.

Instructions

Start by preheating your oven to 150°C/130°C fan/Gas Mark 2. Grease and line a 1 kg cake tin with baking parchment. In a bowl, mix together the flour, baking powder, mixed spice and butter until the mixture resembles breadcrumbs. Add the sugar, eggs, milk, and vanilla extract and stir until the mixture is fully combined. Now fold in the cherries, sultanas, currants, mixed peel and chopped almonds until the fruit and nuts are evenly distributed. Pour the mixture into the cake tin and level the top using the back of a spoon. Place the cake tin into the preheated oven and bake for around 2 hours or until a skewer inserted into the centre of the cake comes out clean. Once cooked, remove the cake from the oven and allow to cool in the tin for around 30 minutes. After 30 minutes, turn the cake out onto a cooling rack and leave to cool completely before decorating.

Decoration

Once the cake is completely cool, you can decorate it however you like. You could cover it with a layer of marzipan and then a layer of fondant icing. Alternatively, you could ice the cake with a buttercream icing or pour a simple drizzle of melted white chocolate over it. If you wanted to keep it really simple, you could just sprinkle a few glace cherries and almonds on top. Whatever way you decide to decorate it, your 1 kg Christmas cake is sure to impress your friends and family.

Storage

Once decorated, store the cake in an airtight container or wrap it in cling film and keep it in a cool, dry place. The cake should keep for up to 4 weeks. If you are planning to keep it for longer than this, you could freeze the cake for up to 3 months.
