Ingredients

- 1/2 cup of dried currants
- 1/2 cup of chopped candied fruit or mixed peel
- 1/2 cup of chopped almonds
- 1/4 cup of chopped crystallized ginger
- 1/4 cup of brandy or rum, optional
- 1/4 cup of apricot jam, optional

Instructions

Preheat oven to 350 degrees Fahrenheit. Grease and flour a 9-inch round cake pan, or line it with parchment paper. In a medium bowl, whisk together the flour, sugars, baking powder, baking soda, cinnamon and nutmeg. In a separate bowl, mix together the melted butter, eggs, milk, and vanilla extract. Add the wet ingredients to the dry ingredients and stir until just combined. Do not over mix.

Fold in the raisins, currants, candied fruit, almonds, and crystallized ginger. If using, add the brandy or rum, and mix to combine. Pour the batter into the prepared pan and smooth the top. Bake for 40-45 minutes or until a toothpick inserted into the center of the cake comes out clean. Allow the cake to cool in the pan for 10 minutes then turn out onto a wire rack to cool completely.

If desired, warm the apricot jam in the microwave for 30-45 seconds until it is liquid. Brush the top and sides of the cake with the jam. Allow the jam to set for about 15 minutes before serving. The cake can be stored in an airtight container for up to 5 days.
