Strawberry And Cream Layer Cake Recipe
Ingredients
This scrumptious strawberry and cream layer cake is the perfect way to celebrate any special occasion. To get started, you will need the following ingredients:
- 1 (18.25 ounce) package white cake mix
- 1 (3.4 ounce) package instant vanilla pudding mix
- 1 cup sour cream
- 1/2 cup vegetable oil
- 4 eggs
- 1 teaspoon vanilla extract
- 2 tablespoons grated orange zest
- 1 (10 ounces) package frozen sweetened sliced strawberries, thawed and drained
- 1 (8 ounces) package cream cheese, softened
- 1 (14 ounces) can sweetened condensed milk
- 1/4 cup fresh lemon juice
- 1/2 teaspoon almond extract
- 2 cups heavy cream, whipped
- 1/4 cup slivered almonds, toasted
Instructions
Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 9 inch round cake pans. In a large bowl, combine cake mix, pudding mix, sour cream, oil, eggs, vanilla extract, and orange zest. Beat on low speed for 30 seconds, then on medium for 2 minutes. Divide batter evenly between the two prepared pans.
Bake for 20 to 25 minutes in the preheated oven, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool for 10 minutes in the pans, then turn out onto wire racks and cool completely.
To make the filling, in a medium bowl, beat cream cheese until smooth. Gradually beat in condensed milk, then stir in lemon juice and almond extract. In a separate bowl, whip cream until soft peaks form. Fold into cream cheese mixture. Arrange half of the cake slices in the bottom of a 9 inch springform pan. Top with half of the strawberries, then half of the cream cheese filling.
Repeat with remaining cake, strawberries, and filling. Sprinkle with toasted almonds. Cover, and refrigerate for 4 hours before serving.
