Ingredients

  • 1 box of cake mix
  • 1/2 cup of butter, melted
  • 2 eggs
  • 1/2 cup of Baileys
  • 1/2 cup of confectioners sugar
  • 1/4 cup of cocoa powder
  • 1/4 cup of white chocolate chips
  • 1/4 cup of semi-sweet chocolate chips

Instructions

To make the cake pops, start by preheating your oven to 350 degrees F. Grease a 9x13-inch baking dish and set aside.

In a large bowl, mix together the cake mix, melted butter, eggs, and Baileys until combined. Pour the batter into the prepared baking dish and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

Once the cake is done baking, let it cool completely. Once cooled, crumble it with your hands until it resembles fine crumbs. Place the crumbs in a large bowl and add the confectioners sugar, cocoa powder, and both kinds of chocolate chips. Mix until well combined.

Using a cookie scoop, form the mixture into 1-inch balls and place them on a parchment-lined baking sheet. Using a lollipop stick, poke a hole in the center of each cake pop and place them in the fridge to chill for about 20 minutes.

Meanwhile, melt the semi-sweet chocolate chips in a double boiler or in the microwave. Dip each cake pop into the melted chocolate and place them back on the baking sheet. Sprinkle with any remaining crumbs, if desired. Place in the fridge to chill until the chocolate has hardened.
