Ingredients

Instructions

To make the cake, preheat the oven to 150°C, 300°F, Gas Mark 2. Grease and line a 20cm (8 inch) round cake tin with baking parchment. Place all the dried fruit (currants, sultanas, raisins, mixed peel, glace cherries) into a large bowl and mix together.

In a separate bowl, cream together the margarine and sugar until light and fluffy. Beat in the eggs one at a time, and then stir in the grated lemon rind and juice, and the brandy, sherry or milk.

Gently fold the flour and mixed spice into the creamed mixture and then add the dried fruit. Mix together thoroughly.

Spoon the mixture into the prepared tin and spread it out evenly. Bake in the preheated oven for 1½ hours or until the cake is golden brown and a skewer inserted into the centre comes out clean.

Leave the cake to cool in the tin for 10 minutes, then turn it out onto a wire rack and leave it to cool completely.
