Ingredients

This spiced apple cake recipe from Mary Berry is a classic. It is easy to make and the results are always delicious. The ingredients you will need for this cake are:

  • 200g (7oz) self-raising flour
  • 1/2 teaspoon ground mixed spice
  • 100g (3 1/2oz) butter, softened
  • 100g (3 1/2oz) caster sugar
  • 2 large eggs
  • 2 tablespoons milk
  • 2 eating apples, peeled, cored and diced
  • 50g (1 3/4oz) sultanas
  • 1 tablespoon demerara sugar

You will also need an 18cm (7in) round cake tin.

Instructions

To make this spiced apple cake you will need to preheat your oven to 180C/350F/Gas 4. Grease and line the cake tin with baking parchment.

Sift the flour and mixed spice into a bowl, then add the butter and rub the mixture together with your fingertips until it resembles breadcrumbs. Stir in the caster sugar.

Mix the eggs and milk together in a jug and pour into the flour mix. Stir with a wooden spoon until you have a soft, dropping consistency.

Stir in the apple pieces, sultanas and a tablespoon of demerara sugar. Spoon into the tin and spread level. Sprinkle a little more demerara sugar over the top.

Bake the cake in the preheated oven for 45 minutes or until a skewer inserted into the centre comes out clean. Leave the cake to cool in the tin for 10 minutes before turning out onto a wire rack to cool completely.

Serve the spiced apple cake with a dollop of cream or a spoonful of custard.
