For the ganache:

  • 1/2 cup semisweet chocolate chips

For the topping:

Instructions

Making the Cake

Preheat the oven to 350 degrees Fahrenheit. Grease and flour two 9-inch round cake pans and set aside.

In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt. Set aside.

In a large bowl, cream together the butter, oil, and sugar until light and fluffy. Beat in the eggs one at a time, then add the vanilla extract. Alternately add the dry ingredients and the buttermilk, beginning and ending with the dry ingredients. Beat until just combined.

Divide the batter evenly between the two prepared pans and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool completely before assembling.

Making the Mousse

Place the heavy cream, chocolate chips, butter, and sugar in a heatproof bowl set over a pot of barely simmering water. Stir occasionally until the chocolate is melted and the mixture is smooth. Remove from heat and stir in the vanilla extract. Allow the mixture to cool to room temperature.

In the bowl of a stand mixer fitted with the whisk attachment, whip the cooled chocolate mixture on medium-high speed until light and fluffy, about 5 minutes. Refrigerate until ready to use.

Assembling the Cake

Place one of the cooled cakes on a cake stand or plate. Spread the mousse over the top, then top with the second cake. Place in the refrigerator while you make the ganache.

Making the Ganache

Place the heavy cream and chocolate chips in a heatproof bowl set over a pot of barely simmering water. Stir occasionally until the chocolate is melted and the mixture is smooth. Remove from heat and allow to cool for about 5 minutes.

Remove the cake from the refrigerator and pour the ganache over the top, spreading to the edges. Allow the ganache to set before serving.

Topping the Cake

Melt the chocolate chips in a heatproof bowl set over a pot of barely simmering water. Remove from heat and allow to cool slightly before pouring into a piping bag. Pipe the melted chocolate over the top of the cake in a decorative pattern.
