Instructions



1. Preheat oven to 350°F. Grease and flour a 9-inch round cake pan.

2. In a medium bowl, sift together the flour, cocoa powder, baking soda and salt. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the buttermilk and vanilla. Gradually stir the dry ingredients into the wet ingredients until just combined. Pour batter into prepared pan and bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean. Allow cake to cool completely.

3. To make the chocolate mousse, melt the chocolate chips and butter in a double boiler or in a bowl set over a pot of simmering water. Remove from heat and stir in the corn syrup. In a separate bowl, whisk together the cream and sour cream until combined. Stir the cream mixture into the melted chocolate until thick and creamy. 4. To make the almond brittle topping, preheat oven to 350°F. Spread the almonds on a baking sheet and bake for 10 to 12 minutes, or until golden brown. In a medium saucepan, combine the sugar, butter and corn syrup. Cook over medium-high heat, stirring constantly, until the mixture begins to caramelize. Remove from heat and stir in the almonds and salt. Pour the almond brittle over the top of the cake and refrigerate until ready to serve.
