Ingredients

For this recipe, you will need:
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground allspice
  • 1/4 teaspoon ground ginger
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 eggs
  • 1/2 cup sour cream
  • 1 teaspoon vanilla extract
  • 1 cup mixed dried fruit (such as raisins, currants, and cherries)
  • 1/2 cup chopped nuts (such as walnuts, pecans, or almonds)
  • 1/2 cup candied citrus peel
  • 1/4 cup brandy or orange juice

Instructions

Step 1: Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, allspice, and ginger. Set aside.

Step 2: In a large bowl, beat the butter and sugar until light and fluffy. Beat in the eggs one at a time, then add the sour cream and vanilla extract.

Add the dry ingredients to the wet ingredients and mix until just combined. Fold in the mixed dried fruit, nuts, and candied citrus peel. Pour the batter into the prepared pan and spread evenly.

Step 3: Bake for 50 to 60 minutes, or until a toothpick inserted in the center comes out clean. Let the cake cool in the pan for 10 minutes, then turn it out onto a wire rack.

While the cake is still warm, poke several holes in the top with a skewer. Pour the brandy or orange juice over the cake and let it cool completely.

Step 4: To decorate the cake, mix together 1 cup of confectioners' sugar and 2 tablespoons of water to make a smooth glaze. Spread the glaze over the top of the cake, then top with chopped nuts and dried fruit. Let the glaze set before serving.
