Ingredients

This delicious Women's Weekly celebration fruit cake is best made with the following ingredients: 500g mixed dried fruit, 250g butter, grated rind of 1 lemon, 2 tablespoons of golden syrup, 2 tablespoons of rum, 2 eggs, 2 cups of self-raising flour, 1 cup of caster sugar and 2 tablespoons of ground almonds.

Instructions

Start by preheating your oven to 150°C. Grease and line a 20cm round cake tin with baking paper. In a saucepan, melt the butter and golden syrup together over low heat and then add the dried fruit, lemon rind, rum and 2 tablespoons of water. Simmer for 2 minutes then remove from the heat and allow to cool.

In a separate bowl, beat together the eggs and sugar until light and fluffy. Sift the flour and ground almonds into the egg mixture and stir until combined. Gradually add the cooled fruit mixture and fold through. Finally, spoon the cake mixture into the prepared tin and bake for 1¼-1½ hours, or until a skewer inserted into the cake comes out clean.

Allow the cake to cool in the tin for 10 minutes before turning it out onto a wire rack. Once cooled, decorate with icing and/or glace cherries for a festive look.
