Ingredients Needed



This recipe requires the following ingredients:

- 2 cups all-purpose flour
- 2 cups granulated sugar
- 3/4 cup cocoa powder
- 2 teaspoons baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 cup vegetable oil
- 2 cups water
- 2 teaspoons pure vanilla extract
- 2 cans (21 ounces each) cherry pie filling
- 2 cups heavy cream
- 2 tablespoons confectioners’ sugar
- 2 tablespoons cocoa powder
- Chocolate shavings for garnish

Instructions



1. Preheat oven to 350 degrees F. Grease two 9-inch round cake pans.

2. In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, baking powder and salt until well combined.

3. In a separate bowl, whisk together the vegetable oil, water and vanilla extract until well blended.

4. Pour the wet ingredients into the dry ingredients and whisk until just combined. Do not over mix.

5. Divide the batter between the two prepared cake pans and bake for 30 minutes or until a toothpick inserted into the center comes out clean. Allow the cakes to cool for 10 minutes before transferring them to a wire rack to cool completely.

6. To assemble the cake, place one of the cooled cakes on a cake stand or plate. Spread the cherry pie filling over the top of the cake. Place the second cake on top and press down gently.

7. In the bowl of an electric mixer, whip the heavy cream with the confectioners’ sugar and cocoa powder until stiff peaks form. Spread the whipped cream over the top and sides of the cake and garnish with chocolate shavings.

Serving and Storing



This cake should be served chilled or at room temperature. Leftovers can be stored in the refrigerator for up to 3 days.
