Ingredients

To make this mouth-watering Christmas cake, you will need the following ingredients: 500g of raisins, 500g of sultanas, 500g of currants, 250g of glacé cherries, 250g of mixed peel, 250g of ground almonds, 250g of soft dark brown sugar, 250g of softened butter, 125ml of brandy, 4 large eggs, 250g of plain flour, 2 tsp of ground cinnamon, 1 tsp of ground nutmeg, and 1 tsp of ground ginger.

Instructions

Preheat your oven to 160C (320F/Gas Mark 3). Grease and line a 9-inch cake tin with a double layer of greaseproof paper and grease again. Place all of your ingredients into a bowl and stir together until everything is thoroughly combined. Pour the mixture into your prepared tin and bake for 2-3 hours, or until a skewer comes out clean when inserted into the centre of the cake. Once cooked, leave the cake to cool in the tin. Once cooled, wrap the cake in greaseproof paper and store in an airtight container until you are ready to decorate.

Decoration

To decorate the cake, you will need some marzipan and some ready-made royal icing. Start by rolling out the marzipan to a thickness of around 5mm and lay it on top of the cake. Use a rolling pin to press the marzipan down firmly onto the cake. Now, spoon the royal icing over the top of the marzipan, using a palette knife to spread it out evenly. To finish, decorate the cake with festive candied fruits and nuts of your choice.

Once the cake has been decorated, it can be served straight away or stored in an airtight container for up to 3 months. When ready to serve, cut into generous slices and enjoy! This cake is sure to be a hit at any Christmas gathering!
