Ingredients

This simple peanut butter cake recipe consists of just a few basic ingredients, which makes it a great treat to whip up when you’re in a hurry. You’ll need:

- 2 cups of all-purpose flour

- 1 teaspoon baking powder

- 1 teaspoon baking soda

- 1 teaspoon of salt

- 1 cup of butter, softened

- 2 cups of granulated sugar

- 4 large eggs, room temperature

- 2 teaspoons of vanilla extract

- 1/2 cup of creamy peanut butter

- 1/2 cup of milk

- 1/2 cup of semi-sweet chocolate chips (optional)

- 1/4 cup of chopped peanuts (optional)

Instructions

Preheat your oven to 350 degrees Fahrenheit and prepare a 9-inch round cake pan by greasing it with butter and lightly dusting it with flour. In a medium bowl, mix together the flour, baking powder, baking soda, and salt. Set aside.

In a large bowl, cream together the butter and sugar until light and fluffy. Add the eggs, one at a time, mixing after each addition. Beat in the vanilla extract and peanut butter until blended. Add the flour mixture in three batches, alternating with two batches of the milk, mixing after each addition. Stir in the chocolate chips and chopped peanuts, if desired.

Pour the batter into the prepared cake pan and bake for 40 minutes, or until a cake tester comes out clean. Let the cake cool completely before frosting.

For the frosting, mix together 1/2 cup of softened butter, 1/2 cup of peanut butter, 2 cups of powdered sugar, 1 teaspoon of vanilla extract, and 2 tablespoons of milk until light and fluffy. Spread the frosting over the cooled cake and top with additional chopped peanuts if desired.
