Ingredients

To make this delicious small rich fruit cake, you will need: 8 ounces butter, 8 ounces caster sugar, 6 ounces currants, 6 ounces sultanas, 6 ounces raisins, 2 ounces dried cranberries, 4 ounces mixed peel, 1 teaspoon mixed spice, 2 teaspoons ground ginger, 4 eggs, 8 ounces self-raising flour, 2 tablespoons apricot jam.

Instructions

Preheat the oven to 160°C/Gas Mark 3. Grease a 6 inch round cake tin and line with baking parchment. Cream the butter and sugar together in a bowl until light and fluffy. Put all of the dried fruit, mixed spice and ginger into a separate bowl, stir together, then add to the creamed butter and sugar.

Beat the eggs and add to the mixture, followed by the flour. Beat the mixture together until fully combined, then spoon the cake mixture into the prepared tin. Level the surface with a spoon and bake in the preheated oven for 1 hour or until a skewer inserted in the centre comes out clean.

Leave to cool for 10 mins in the tin before transferring to a wire rack. Heat the apricot jam in a small pan until melted, then brush over the top and sides of the cake. Once the cake is completely cool, wrap in greaseproof paper, tin foil and store in an airtight cake tin.
