Instructions

Preheat oven to 350°F. Grease and flour two 9-inch round cake pans.

In a medium bowl, whisk together the flour, baking powder, baking soda and salt. Set aside.

In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs, one at a time. Beat in the sour cream and vanilla extract until smooth.

Gradually beat in the flour mixture until just combined. Fold in the mashed banana until just combined.

Divide the batter evenly among the two prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean.

Spread the remaining half of the sliced strawberries over the pudding layer. Place the second cake layer on top. Spread the heavy cream over the top of the cake. Sprinkle with the remaining pudding mix and the 2 tablespoons of sugar.

Cover and refrigerate for at least 1 hour before serving.
